These homemade corn muffins are moist, fluffy, and easy to make from scratch. This recipe yields a savory muffin with just enough sweet and fresh corn kernel! They’re best served fresh from the oven and are great for snacks or side dish.

Ingredients:
- 1 1/2 cups all purpose flour
- 1 1/4 cup cornmeal
- 1/4 cup brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp salt
- 1 tsp black pepper
- 2 cups fresh corn kernel
- 2 large eggs and 1 large egg yolk
- 3/4 cups sour cream
- 1/4 cups milk
- 125g eden cheese
- 1/2 cup melted butter (unsalted)
Instructions:
- In a large bowl, prepare all-purpose flour
- Add cornmeal, brown sugar, black pepper, baking soda
- Add salt, baking powder, and fresh korn kernel
- Mix the ingredients together
- For butter mixture, place together melted butter, fresh milk, sour cream, 2 eggs and 1 egg yolk in a separate bowl
- Blend the ingredients together
- Combine dry and liquid ingredients
- Tips: Add the butter mixture half at a time to perfectly mix the ingredients
- Spoon batter into prepared muffin cups
- Add cheese in the middle and cover with batter
- Topping with fresh corn kernel
- Pre-heat oven to 250c
- Bake at 180c for 45 min to 1 hour or until a toothpick inserted into center comes out clean
- Let it cool down for 10 minutes and serve
