These homemade corn muffins are moist, fluffy, and easy to make from scratch. This recipe yields a savory muffin with just enough sweet and fresh corn kernel! They’re best served fresh from the oven and are great for snacks or side dish.

  • 1 1/2 cups all purpose flour
  • 1 1/4 cup cornmeal
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 cups fresh corn kernel
  • 2 large eggs and 1 large egg yolk
  • 3/4 cups sour cream
  • 1/4 cups milk
  • 125g eden cheese
  • 1/2 cup melted butter (unsalted)


  1. In a large bowl, prepare all-purpose flour
  2. Add cornmeal, brown sugar, black pepper, baking soda
  3. Add salt, baking powder, and fresh korn kernel
  4. Mix the ingredients together
  5. For butter mixture, place together melted butter, fresh milk, sour cream, 2 eggs and 1 egg yolk in a separate bowl
  6. Blend the ingredients together
  7. Combine dry and liquid ingredients
  8. Tips: Add the butter mixture half at a time to perfectly mix the ingredients
  9. Spoon batter into prepared muffin cups
  10. Add cheese in the middle and cover with batter
  11. Topping with fresh corn kernel
  12. Pre-heat oven to 250c
  13. Bake at 180c for 45 min to 1 hour or until a toothpick inserted into center comes out clean
  14. Let it cool down for 10 minutes and serve
